Tips for Awesome Pear and Beet Salad

This salad is impeccable. I love the way the flavors play together to create fantastic flavor. With a few tips and variations you can keep the flavor and texture and always have a winner on your hands. Mix this beet salad up as soon as you can!

  • Roast your Walnuts: To intensify the flavor of the walnuts you can roast them. It can also decrease their bitterness. Place the walnuts in a skillet and roast over medium heat till one shade darker and fragrant. Let cool before adding to the salad.
  • Substitute for Walnuts: You can use pecans instead of walnuts if desired. Roast them as well for intensified flavor.
  • Other Cheese to Use: Pear and beets go ideally with strong cheeses. Instead of feta you can use gorgonzola, blue cheese, goat cheese or even shaved parmesan for a bit milder nutty flavor. Aged sharp cheddar will also work in this salad.
  • Chop: Cut up the beets and pears to your desired size. I like to keep things all bite sized. You can also chop the greens if you feel they are too big. Make it to your liking.
  • Mixed Green Variation: Any mixed leafy green mix will do in this recipe. But void iceberg lettuce, you want leafy greens for best taste and texture.
  • What do I serve this with? This can easily stand alone as a vegetarian meal served with a nice crusty bread. It also pairs beautifully with Chicken, Pork, Fish or Beef. You can serve it with just about anything, and have an incredible dinner.

All You Need to Know About Pears

Pears make this beet salad incredible! They have a unique flavor that brightens the salad. I love pears combined in salads, they add so much texture and flavor. Like in this Grilled Chicken, Bacon and Pear Salad with Poppyseed Dressing or Strawberry, Apple and Pear Spinach Salad. Pears can be tricky things to work with, however. Here are a few tips to help.

  • What Kind to Use? Bartlett, Anjou and Bosc are all wonderful varieties that work with this salad. Asian pears are more crisp similar to an apple. It will work as well, just know the texture will be a bit different. Use a variety of pears in the salad to mix it up and increase flavor.
  • How do I know they’re Ripe: You definitely want pears that are firm but ripe. So plan this dish according to when your pears are ready.  When pears are ripe and ready they should yield slightly to pressure when pressed near the stem. Avoid soft pears, they will be mushy and mealy in the salad.
  • How to Ripen Pears Faster? Needing pears sooner than later? Try placing them in a brown paper bag on your counter with a banana inside. Check them daily. To slow down them ripening place in the refrigerator.
  • Be Gentle: Pears are very susceptible to bruising so handle carefully and store in a single layer.
  • Keep them from turning Brown:  Cut and add the pears right before you add the dressing. The honey and vinegar will help keep the pears from turning brown as quickly. You can also toss them with a little bit of lemon juice if you desire.

  • 2 cups roasted beets

Chia Seed Pudding

When I first worked out how simple chia pudding is to make, I was blown away. All that flavor, and knowing your body will thank you, all for just 3 ingredients, a bowl and a few minutes.

It’s versatile too! Use whatever milk you like, any sweetener you like and top it with your favorite toppings. You could have a new flavor every day.

3 Ingredient Chia Pudding

Chia pudding is a great source of fibre, protein, omega-3 fatty acids and anti-oxidants. They have even been linked to improved cardiovascular health and even lowering of LDL cholesterol, (source). Chia seeds absorb liquid and develop a gel that makes them perfect for thick puddings but also thickening sauces too.

  • Chia seeds: Native to Mexico and eaten since ancient times (the Mayans and Aztecs believed they gave them strength), these little black or white seeds are nutritional power sources.
  • Milk: I love the flavor of oat milk in this best but use regular milk, almond milk, soy milk, coconut milk …. The list goes on.
  • Maple syrup: To give it a little sweetness. You could swap it for honey, agave syrup, rice malt syrup, monk fruit sweetener or jams and preserves.

How to Make Easy Chia Pudding

Making chia pudding is as simple as deciding what you want in it and mixing it together. That last point means you can make these ahead too so if you don’t like working out what to have for breakfast when you get up, make these days in advance.

  1. In a bowl, combine the milk, chia seeds and maple syrup, then give it a good mix around.
  2. Let it sit for 10 minutes in the fridge, then mix again and pour between two glasses. Make sure your glasses have some room to add a little topping too.
  3. Chill them for at least 2 hours or overnight.

Tips and Variations

  • Thick Pudding: The thickness of the milk you use will determine how thick the pudding gets. Regular cows milk tends to be thinner than almond or coconut milk, for example, so the chia pudding will not be quite as thick.
  • Blend Seeds: If you don’t like the texture of the whole seeds, once the seeds have softened, blend the mixture until smooth. The more powerful the blender, the smoother the result.
  • Flavorings: try adding a tablespoon of cocoa powder for a chocolate version or 1-2 tablespoons of peanut butter. These may be easier to mix in if the milk is warmed slightly. How about vanilla using 1 teaspoon of vanilla extract or a little cinnamon?
  • Different Milk: you can try everything from almond milk for a healthy breakfast to this homemade strawberry milk for an indulgent yet nutritional dessert.

Toppings for The Best Chia Pudding

Already so versatile by adding any flavors you like, you can also top your chia pudding to suit you. A combo I love is mango (a little pureed and a little in chunks) with some coconut flakes.

How to Store Chia Pudding

Mason jars are the perfect storage vessel. The screw on lids keep them airtight, make them portable and you can eat the chia pudding directly from them. Stored airtight in the fridge like this, they will keep for 4-5 days.

Baked Turkey Meatballs

Baked Turkey Meatballs are perfectly seasoned, tender, juicy and absolutely delectable! Super easy and healthy your whole family is going to love these!

The Best Turkey Meatballs

Let’s talk meatballs! Everyone loves to eat meatballs, especially kids. This make it an easy winner for dinner. Everyone will eat them and love them. I’m still not entirely sure why meatballs are so fun to eat, but they just are. They are a definite favorite at our house. These baked turkey meatballs are no exception. Juicy and tender and seasoned just right I could eat them straight from the pan. These turkey meatballs are so dang good!

They are super easy too! In about 30 minutes you can have a superb dinner on the table, even on a weeknight. Baking the meatballs means you don’t have to babysit a pan over the stove. It gives you time and space to get the rest of dinner done or do something else. These are fast, easy and absolutely luscious meatballs! You have to put these on the menu tonight!

Is Turkey more Nutritious than Beef?

Both turkey and beef are great sources of protein and a variety of vitamins and minerals. Turkey, however is generally lower in saturated fat than beef and so is a better choice for heart health. It can also be a great choice for weight loss as it is often lower in calories. Turkey can provide up to 24 grams of protein per a serving and is extremely high in niacin, B6, and B12. It also contains zinc, selenium and phosphorus. All of the health benefits of course depend on the cut and quality of turkey and whether you are eating it with the skin on or not. These turkey meatballs are light and tasty!

Ingredients for Turkey Meatballs

The same ingredients that make beef meatballs are the same that will make up these baked turkey meatballs. Ingredients that you can find in your pantry or at your local grocery store. Have them on hand and ready to go for a quick and easy dinner!

  • Ground Turkey: This can be found near the ground beef.
  • Italian Bread Crumbs: I love these bread crumbs are already seasoned.
  • Onion: small chopped.
  • Eggs: This acts as the binder.
  • Milk: Adds a bit of moisture and helps keep it all together.
  • Garlic: Minced or finely chopped.
  • Salt and Pepper: Add to taste

How to Bake Turkey Meatballs

These turkey meatballs are super easy to throw together. Roll them up and bake them for juicy perfection. They are so good, you will keep them in a regular rotation.

  1. Mix: In a medium bowl place the ground turkey, eggs, milk, onions, bread crumbs, garlic and salt and pepper. Mix until thoroughly combined.
  2. Roll: Roll into 2 inch balls and place in a greased baking dish
  3. Bake: Bake at 400 degrees for 15-20 min or till cooked through out. Internal temp should be165 degrees.

Tips for Moist Turkey Meatballs

These turkey meatballs are all purpose. Meaning they can be used in just about any capacity you need them to. Add them to rice or mashed potatoes. Smother them with BBQ sauce, Cheese Sauce or even Tzatziki Sauce. Use these in so many different ways, they’re scrumptious any way you serve them.

  • Keep them Moist: Turkey is leaner than beef so can dry out quickly. If you find your meatballs are too dry add a little olive oil to the mixture. Or make sure to use some dark turkey meat mixed in with the white.
  • Don’t over cook: Check your meatballs after 15 minutes. The internal temperature should be 165 when done. Over cooking will dry them out and make them tough.
  • Same size: Keep the meatballs the same size as much as possible. This will ensure that they cook at the same rate and some won’t be under done or over done. You can use a cookie scoop or the same sized spoon to help keep them uniform.
  • Use a light hand: Don’t over-mix or over handle the turkey mixture. It can break it down and make it tough. It can also make the meatballs hard to form and turn them more into meat discs than meatballs.
  • Intensify the Flavor: There are many ways to make these meatballs sing with even more flavor if you wish. Add fresh herbs, parmesan or other grated cheese, and add spices that will complement your dish. They are so easy to customize and make how you wish. Get creative and have some fun. Try a different variation every night you make them!

Freezing and Storing Easy Baked Meatballs

I love meatballs! Did I say that already?! They are so easy to store and freeze for a later time. I love to make a double batch and freeze the leftovers for a night when I’m really scrapped for time. It’s a double winner for dinner!

  • Store: Store leftovers in an airtight container or even a zip lock bag and keep in the fridge for up to 5 days. Reheat in the microwave or you can even warm them up in a sauce you plan to eat them with.
  • Freeze: Let the meatballs cool to almost room temperature. Place on a cookie tray and cover loosely with plastic wrap. Freeze for 2 hours. Transfer the partially frozen meatballs to a freezer safe gallon zip lock bag. Freeze for up to 3 months. Thaw overnight in the refrigerator or warm them straight from the freezer in the microwave at 50% power till heated through. Enjoy in your favorite dishes.

  • 1 pound ground turkey
  • 1 cup Italian breadcrumbs*
  • 1 small onion diced
  • 2 large eggs
  • 1/4 cup milk
  • 3 cloves garlic minced
  • 1/2 teaspoon salt

Instructions

  • Preheat oven to 400 degrees. In a medium size bowl combine turkey, breadcrumbs, onion, eggs, milk, garlic, and salt and pepper. Mix until incorporated.

How to Cook Bacon in an Air Fryer

If you can load the fryer and turn it on, then you can make this bacon. It’s so simple! I love that it’s done so quickly! No more hunched over a splattering pan of grease waiting for bacon to fry up and constantly readjusting it so that it’s cooked evenly. Just put it in and turn it on and check it. Let the air fryer do the rest. You may never cook bacon any other way again.

  1. Lay: Take 5 slices of bacon and place in the bottom of the air fryer basket in a single layer.
  2. Cook: Turn fryer on to 360 degrees and fry for 8-10 minutes. Check halfway through and rearrange if necessary. Continue cooking till desired crispness.
  3. Drain: Remove the bacon and place on a paper towel lined plate. Serve immediately.

The Best Air Fryer Bacon Tips

Air frying bacon is perfect for when you want small batches of bacon fast for a quick breakfast or for a recipe like this Slow Cooker Crack Chicken or Slow Cooker Cheesy Bacon Ranch Potatoes. When you want a large amount of bacon done all at the same time, try baking it in the oven. It takes a little longer than frying it on the stove top, but the clean up is a breeze! And the bacon is crispy and evenly cooked. I love using the air fryer in a pinch. It’s such a life saver. Here are tips for even better experience.

  • Bacon:  The air fryer uses circulating air to cook the food inside, so sometimes the bacon can get flung around a bit. I have found using a thick cut bacon helps it stay in place better. The great thing is that you can use whatever kind of bacon you want. Even turkey bacon works in this recipe.
  • Size: Make sure your bacon slices are as even as possible. That way you can ensure even cooking.
  • Check it: Don’t be afraid to check it half way through and rearrange the bacon if necessary. You can also check it at that time for doneness and adjust your time accordingly.

How to Prevent your Air Fryer From Smoking

When you cook foods in the air fryer that are already fatty, like bacon, they can cause your air fryer to smoke quite a bit. This is because the grease or fat drips down and causes the it smoke. It can seem like quite a lot of smoke depending on your air fryer. If this is the case there are a few things you can do to help prevent that.

  • Instructions: Be sure to check your air fryers instructions and procedures for proper cooking of foods that have high fat content. Every air fryer is a little bit different so follow the recommendations of your air fryer.
  • Lower:  You can lower the temperature that you cook your bacon at, however I wouldn’t go lower than 345 degrees. It’ll take too long to cook. But if you have time you certainly can try.
  • Dump: Dump out and wipe out the bottom tray where the grease collects between each batch. This will help reduce the smoking.
  • Bread: It may sound a bit weird but placing large pieces of bread in the bottom tray to soak up the grease drippings can help a ton. Make sure the bread pieces are good sized but not so big that they keep from allowing the air to circulate properly.
  • Water:  Adding a bit of water to the bottom tray can also reduce the smoking. Again, be sure to follow manufacturer’s recommendations. Mixing grease and water can cause it to pop so handle with care.
  • Turkey Bacon: Using turkey bacon has less fat so it will  automatically smoke less.
  • Placement: You can place your air fryer under your oven vent or near a window if you find it smoking excessively.
