Italian Christmas Cookies are soft, buttery, fluffy and melt in your mouth delicious. Flavored with a hint of vanilla and a sweet glaze, these tasty treats are a perfect holiday treat. Take them to your next cookie exchange, party or just for fun occasion!

Sweet, buttery Italian Christmas Cookies

Easy Italian Christmas Cookies

These Italian cookies are often made with anise, which is a licorice flavor. Not everyone loves that flavor so I swapped it out for vanilla and topped it with an amazing almond glaze. They are fluffy and decadent and very festive. They are a great cookie for kids to help with.

This recipe makes quite a big batch, which is perfect for gift giving and having enough to eat too. You can double the recipe if you need more and you can half the recipe if you’d like less. Perfect!

Christmas Cookie Ingredients

Ricotta cheese is the secret ingredient for moist tender cookies

  • Butter: Soften the butter but don’t melt it.
  • Sugar White sugar not brown.
  • Flour: All purpose flour or unbleached flour all work
  • Baking Soda and Baking Powder: Raising agents for fluffiness
  • Ricotta cheese Look for ricotta cheese with other italian cheeses in the refrigerated section
  • Eggs: Binder for the cookies
  • Vanilla: Delicate flavor

Whipping Up Italian Christmas Cookies

These are quite easy to make, have to love that!

  1. Beat: Place the butter and sugar in a bowl of a stand mixer and beat till fluffy, can also use a hand mixer
  2. Add: Add in the ricotta and eggs and mix till incorporated.
  3. Separate: In another bowl whisk together the flour, baking soda and powder. Slowly add to the wet ingredients and beat till combined
  4. Scoop: Scoop the dough by teaspoon size and roll into a ball. Drop on a parchment lined baking sheet.
  5. Bake: Bake for 8-10 minutes in a 350 degree oven till just set.

  • Powdered Sugar: Base of the glaze
  • Milk: Add slowly so not to make the glaze too runny.
  • Almond Extract: Gives it the almond taste
  • Sprinkles: Pick the color and style you desire

In a small bowl whisk together the powdered sugar, milk and almond extract till you get the desired consistency. Frost and sprinkle the cookies once cooled.

Tips and Variations

These are sure to please any crowd and with these tips and variations they’re a winner!

  • Glaze: Add a tablespoon of milk one at a time to get the desired consistency instead of all at once. You can make it thick or thin, it’s up to you.
  • Sprinkles:  Change the color of the sprinkles for the holiday, or occasion. Example Black and orange for Halloween or pink or blue for a baby shower. You can serve these cookies anytime of the year despite their title!
  • Flavoring: These are very flexible cookies. Change out the vanilla extract for peppermint, almond, coconut, or any other flavoring and add a complimentary flavoring in the icing, orange, cocoa, etc.
  • Don’t Overbake: These shouldn’t be brown on top. If you over bake them, they’ll be dry.
  • Frost: If you glaze the cookies while slightly warm, the glaze can seep into the cookie, yum. Always decorate with your sprinkles right after you glaze so that they’ll stick.
  • Scoop:  If you have one use a cookie scoop so they are the same size, they’ll cook easier that way.

Storing Italian Cookies

You probably won’t be able to keep these around for too long, they’re just too fun to eat!

  • Storing:  Let the cookies set for up to 24 hours before transferring to an airtight container to keep for up to a week. Letting them set up will keep the glaze from becoming wet and slimy.
  • Freezing: You can freeze these unglazed once they’ve completely cooled or freeze them glazed. They’ll keep for up to 2 months in a freezer safe container or bag. Just remember freezing the cookies glazed could create the sprinkles to dissolve and the glaze to become melty when thawed. Glaze frozen cookies once thawed.

Ingredients

  • 1/2 cup butter softened

Instructions

  • Preheat oven to 350 degrees. Add the butter and sugar to the bowl of a stand mixer and beat until fluffy with the paddle attachment. Add in the ricotta cheese and eggs and mix until incorporated.
  • In a medium sized bowl whisk together the flour, baking soda, and powder. Slowly add to the wet ingredients and beat together until combined.
  • Scoop the dough into teaspoons and roll into a ball. Drop on a parchment lined baking sheet. Bake for 8-10 minutes or until just set. Remove onto a wire rack to let cool.

To make the glaze:

  • In a small bowl whisk together the powdered sugar, milk and almond extract until you get the desired consistency. I like to dip the top of the cookies in the glaze and let them set on parchment paper. Sprinkle with Christmas sprinkles immediately.

Creamy Parmesan Brussel Sprouts Gratin with Bacon

This super flavorful dish is layered with a creamy cheesy sauce, topped with more cheese and then bacon. All baked to tender perfection. If you have brussels sprout haters in the family, this will make them a believer. It’s just so good.

When you think “au gratin” you think comfort food! Even though this a veggie dish, it’s still full of comfort! Make it for Thanksgiving, or next Tuesday night. Whenever you want to have side dish that steals the show.

Brussel Sprouts Gratin Ingredients

Homey ingredients make for a comfort food recipe to love.

  • Brussels Sprouts: Wash, trim and cut in half.
  • Bacon: Diced or crumbled
  • Butter: Adds creaminess and richness
  • Flour: Thickener for the sauce
  • Salt and Pepper: Add to taste
  • Whipping Cream: Not to be confused with cool whip, may also use half and half.
  • Parmesan Cheese: Grated parmesan cheese works best.
  • Mozzarella Cheese: Shredded

This is pretty easy to throw together. Perfect for a busy day of cooking

  1. Blanch: In a large pot of boiling water add the brussels sprouts and blanch for 7 minutes. Add them to an ice bath to stop the cooking process. Drain and set aside.
  2. Cook: Cook the bacon and set aside on a paper towel lined plate to drain.
  3. Place: Preheat oven to 350 degrees. Place the brussel sprouts in the bottom of 9×13 pan or a large skillet.
  4. Sauce: In a small saucepan add the butter, flour, salt and pepper. Whisk in the heavy cream, parmesan cheese until it starts to thicken.
  5. Layer: Pour over the brussel sprouts and top with bacon and cheese.
  6. Bake: Backe for 20-25 min till golden and bubbly.

Why Blanching?

  • What is it? Blanching is a cooking method in which a food, usually a vegetable or fruit, is scalded in boiling water, removed after a brief, timed interval, and finally plunged into iced water or placed under cold running water to halt the cooking process.
  • Why?  Blanching is a great method to use because it stops enzyme actions which can cause a loss of flavor, color, and texture. Further, it cleanses the surface of dirt and organisms, brightens the color, and helps to prevent loss of vitamins. It’s often used before freezing or canning fruits and vegetables. Besides the added benefits of blanching the brussels in this recipe it also begins the cooking process for the them, which can take a long time to cook..
  • Make it Greener: Add a pinch of baking soda for an even brighter green color.

Tips and Variations for Au Gratin

  • Topping: For a bit of added crunch toast some panko or bread crumbs in butter and put on top.
  • Cheese:  Both parmesan and mozzarella are great in this recipe, but can be substituted. For a different flavor try asiago and gruyere. They pair beautifully with brussels sprouts too.
  • Roasting: If you don’t want to blanch your sprouts, you can pre-roast them as well. Toss the sprouts in oil and roast in oven at 400 for 15-20 min. Then layer as recipe directs.
  • Veggies: If desired swap out the brussels sprouts and use broccoli, cauliflower or carrots. Use a variety of all of them or few of them if you want too.

Linzer cookies are a combination of buttery orange infused shortbread and jam, as pleasing to look at as they are to eat. These festive treats are perfect for any holiday or special occasion.

Linzer Cookie Recipe

These elegant cookies are so joyful just to look at, with their top centers cut out in a fun shape to show through the colorful jam. The dusting of powdered sugar adds the perfect touch creating a fancy touch to these morsels of joy.

Perfect for gift giving, cookie exchanges, parties or just because, these will be the star of the table. The buttery shortbread has just enough zest and cinnamon to add flavor coupled with a tart filling is a match made in heaven.

What is a Linzer Cookie?

The linzer cookie is smaller twist and version of a Linzertorte, which is said to have originated in Linz Austria in the early 1700s. The torte traditionally was made of flour, ground nuts, sugar, egg yolks, citrus zest and spices. It was filled with preserves and topped with a lattice crust. The cookie is made with the same ingredients but presented in cookie form with the jam sandwiched between and dusted with powdered sugar. So divine!

Shortbread Linzer Ingredients

  • Butter: Make sure this is at room temperature.
  • Sugar: granulated
  • Orange Zest: brightens the cookie dough flavor
  • Egg Yolk: binder for the dough
  • Vanilla: sweetness
  • Flour: All purpose
  • Almond Flour: You can find this with regular flour in the baking section or your local grocery store.
  • Salt: Creates balance to the sweetness
  • Cinnamon: Just enough spice

Don’t Forget the Jam!

The jam is the best part of the filling for these Linzer Cookies. You will love the burst of flavor that comes in each bite of cookie!

  • Jam: Use your favorite jam, strawberry, raspberry, lemon or other.
  • Powdered sugar: This is for sifting over the cookies.

Making Raspberry Linzer Cookies

  1. Beat: Add sugar and orange zest to stand mixer bowl, use a hand whisk or your fingers to rub the mixture together to release the citrus oil. Add softened butter and beat with the paddle attachment until fluffy. Add egg yolk and vanilla extract, and beat until combined.
  2. Whisk: In a small bowl whisk both flours, salt, and cinnamon then add to the butter mixture and beat till combined.
  3. Refrigerate: Place the dough onto a piece of plastic wrap and pat into a disc and wrap well and refrigerate for at least 1 hour till firm.
  4. Roll it Out: On a lightly floured countertop, roll the dough to 1/4″ thick and cut with 2″ cookie cutter. Use a smaller cookie cutter to make a cutout in the center for half of the cookie dough. Gather the scraps and roll it back out again. Continue cutting until all is gone.
  5. Refrigerate:  Place cookie dough on a parchment lined baking sheet about 1″ apart, refrigerate while waiting for oven to preheat to 350 degrees F.
  6. Bake: Bake for 10-12 min till edges are just beginning to brown. Let them cool on the baking sheet for 5-10 min before moving to a cooling rack to cool completely.
  7. Assemble: Place the cookies with the center cutouts on a separate baking sheet and sift powdered sugar over the top. Place the whole cookies on another baking sheet with the bottom side up. Spoon 1 teaspoonful of jam filling on top, use a butter knife to spread it slightly. Place sugar dusted cookies on top of the jam to complete assembly.

Tips for the Most Stately Linzer Cookies

These aren’t overly complicated but there are a few things to ensure perfection.

  • Rolling: Roll the dough out thinly, if it’s too thick you’ll lose the shape in the oven and they can become dry and hefty.
  • Making Rolling Easier:  If you find rolling out refrigerated dough hard to do, try rolling it out first then refrigerating it covered on parchment lined baking sheet.
  • Losing it’s Shape: To avoid the cookies losing their shape in the oven, keep them thin and be sure to refrigerate them after you’ve cut them out so the butter can harden up again. This will reduce any spreading.
  • Powdered Topping: If you find the powdered sugar has dissolved into your cookies, dust them again before sandwiching them together. If you want to give another dusting before serving, do it. Use a spoon or knife to dab the jam to help the sugar dissolve into the jam.
  • Store: These will keep for a 3-4 days in an airtight container, or freeze for up to 3 months.

Best Linzer Cookie Variations

  • Jam: Feel free to use what ever kind of jam you like for a filling. I like tart jams as they have a nice zing with the shortbread like cookie. You can also make a nice curd to go in the center. Lemon is a common flavor. And don’t forget chocolate! Chocolate ganache inside would be perfect too!
  • Cutting out: You can use what ever shape of cutters you like, round, square, shaped, the possibilities are endless. You just to need to make sure you have a cutter that is smaller to create the window in the top of the cookie for the filling to shine peek through
  • Cookie Dough: Add 1/2 cup of cocoa powder and an extra egg yolk for a chocolaty version. Substitute lemon zest for the orange, or trade out hazelnut flour for the almond flour. Add more cinnamon, or trade out cardamom or nutmeg for a different flavor.

  • Scrape the dough out of the bowl onto a piece of plastic wrap, pat into a flat disc or rectangle, wrap well and refrigerate for at least 1 hour until firm.

Slow Cooker Cinnamon Almonds

Slow Cooker Cinnamon Almonds are a crunchy, sweet treat made perfectly delicious in the crockpot! These tasty vittles are perfect for snacking, gift giving, and holiday parties. Watch these cinnamon almonds disappear where ever you take them.
Almonds are so yummy, I love using them in my baking. Try them in this Insanely Good Homemade Granola, Almond Roca Cookie Bars or this Almond Joy Poke Cake.

Cinnamon Almonds

Do you know those delicious cinnamon almonds at the mall? Well these are SO much better! And you can make them for about the same price you pay for one of those tiny bags. I LOVED the way this made my house smell! It seriously makes me want to make a batch daily. The brown sugar and cinnamon mixture gives an AMAZING flavor and the perfect crunchiness…. I almost think that the ones at the mall are a little too crunchy. And how perfect are these for gifts for the holidays? I feel like I have to spread the deliciousness of these and give them to all my friends and family!

These are super easy to throw together and let the slow cooker work it’s magic. You do have to stir the almonds every 20 min or so, so don’t set it and forget it. But it’ll be so worth it as you eat these cinnamony little devils. Be careful not to eat them all in one sitting, it’ll be tempting. Trust me.

Cinnamon and Sugar Almond Ingredients

Simple ingredients come together to make a easy treat! These are a MUST make!

  • Sugar: White sugar
  • Brown Sugar: Helps with caramelization and deep rich flavor.
  • Salt: Balances out the sweet.
  • Almonds: Raw unsalted plain almonds.
  • Cinnamon: The star in the spice combo
  • Egg White: Helps the cinnamon and sugar stick and creates crunch
  • Vanilla:  Flavor enhancer
  • Water: Creates the caramelization at the end.

How to Make Cinnamon and Sugared Almonds

Despite it being the slow cooker you don’t want to necessarily walk away! It will need stirring.

  1. Mix: In a large bowl mix together the cinnamon, sugars and salt
  2. Whisk: In a separate bowl whisk the vanilla and egg white together till good and frothy.
  3. Stir: Pour the almonds into the egg white mixture and stir to coat thoroughly.
  4. Coat: Dump the cinnamon and sugar mixture over the almonds and stir to coat.
  5. Slow Cook: Spray your crockpot with cooking spray. Place the almonds inside and stir again to make sure all the almonds are covered. Cook on low for 3-4 hours stirring every 20 minutes
  6. Water:  Drizzle the water over the almonds and stir. Cook for another 30 min.
  7. Cool: Prepare a cookie sheet with parchment or wax paper. Pour the almonds on the cookie sheet and spread out evenly. Allow to cool completely before storing.

Why Egg Whites and Water Work

You might be wondering why you need egg whites and water for roasted almonds.

  • Egg Whites: The egg white acts as a binder for the flavor to the nuts. It also acts similar to merguine when it hits the heat, creating a fine crunchy coating. It helps prevent an oily vibe from the nuts as well.
  • Water: The water creates another binder as well as a sticky shiny coating at the end. You can actually leave out the water if you desire. They’ll still be crunchy, but the coating will be more powdery then sticky.

Tips and Variations

  • Nuts: You can substitute out the almonds and use pecans, cashews, walnuts or other nut of choice.
  • Add ins: Try adding in flaked coconut, sprinkles, crushed candy cane or anything else that tickles your fancy. Add these right after you’ve removed them from the slow cooker so they’re still warm and it’ll stick.
  • Cooling:  The longer you let the almonds cool before bagging or storing the crunchier they’ll stay. Don’t bag or store while warm, they’ll sweat ruining the crunchy cinnamon coating
  • Stir: Remember you need to stir these every 20-30 minutes. Keep covered during cooking process
  • Leftovers: Chop up leftovers for granola, yogurt, and dessert topping. YUM!

Slow Cooker Cinnamon Almonds

Slow Cooker Cinnamon Almonds are a crunchy, sweet treat made perfectly delicious in the crockpot! These tasty vittles are perfect for snacking, gift giving, and holiday parties. Watch these cinnamon almonds disappear where ever you take them.

Ingredients

  • 1 Cup Sugar
  • 1 Cup Brown Sugar
  • 3 Tablespoon Cinnamon
  • 1/8 teaspoon Salt
  • 1 Egg White
  • 2 teaspoon vanilla
  • 3 Cups Almonds
  • 1/8 Cup Water

Instructions

  • Mix together in a large bowl sugars, cinnamon, and salt.
  • In another bowl with a whisk, mix together the egg white and vanilla until it is frothy. Add the almonds and coat thoroughly. This will help the mixture stick to the almonds during the cooking process.
  • Prepare your slow cooker by spraying it with cooking spray. I used a 4 quart. Add the cinnamon almond mixture to the almonds and turn it to low. Stir until the cinnamon sugar mixture is coated well on the almonds. Be prepared for your house to smell amazing!
  • You want to cook for about 3-4 hours. Mine took about 3. Stirring every 20 minutes. In the very last hour, add 1/8 cup water and stir well. This will ensure a crunchy coating and help the mixture to harden.
  • Line a baking sheet with parchment paper and spread the almonds onto the sheet to cool. The almonds should be pretty sticky so be sure to separate them the best that you can and let them cool!
