Whole Wheat Buttermilk Pancakes

Pancakes are a favorite of our family! There is just something magical about warm fluffy tender pancakes first thing in the morning. It’s like by eating them you just know it is going to be a great day!  Served with perfectly scrambled eggs, the best bacon and this absolutely heavenly syrup and your day is set! Anytime I would hear “whole wheat” as an ingredient growing up, I would know it was going to be dense and bland, but it would be good for me! Am I right? Whole wheat has come a long way since then. And baking with it has gotten so much easier. These whole wheat pancakes are so marvelous, you may never make any other kind. They still have that all important ingredient, buttermilk, that makes every pancake better. The chemical reaction it has with the baking soda creates those tempting bubbles that create fluffy clouds of goodness! These whole wheat pancakes are a MUST make for breakfast today!

Ingredients for Healthy Whole Wheat Pancakes

Simple ingredients you can find in your pantry or at your local grocery store. You can find whole wheat flour next to the regular flour. Store the flour in a cool dark place or better yet the fridge or freezer to maintain freshness!

  • Whole Wheat Flour: Nutty and delicious flavor.
  • Sugar: A little bit of sweetness.
  • Baking Soda and Baking Powder: These are the rising agents that help make it light and fluffy.
  • Salt: For balance and flavor.
  • Buttermilk: Creates the lightness with a wonderful tangy flavor. Don’t have any? No worries, you can make your own in minutes!
  • Eggs: The binder for the pancakes.
  • Canola oil:  Can be substituted with coconut oil. Make sure the oil is in liquid form.

How to Make Whole Wheat Pancakes from Scratch

These whole wheat pancakes are just as simple as making The Best Fluffy Buttermilk Pancakes, it comes together quickly for busy mornings. The key is to mix until just combined. Over mixing the batter can decrease the fluffiness in each of the pancakes.

  1. Whisk: In a medium bowl mix together the whole wheat flour, sugar, baking powder, baking soda and salt.
  2. Add: Add in the eggs, buttermilk and oil and stir till just combined.
  3. Cook: Preheat a skillet over medium heat. Spray with cooking spray and drop about 1/4 cup of the batter onto the warm skillet. Once it forms bubbles then flip to the other side and cook until golden brown.

Whole Wheat vs White or All Purpose Flour

Whole wheat and all purpose flour start from the same plant and kernel of wheat but are processed very differently giving them each a distinct color, flavor and texture. Whole wheat flour is made up of the whole wheat kernel, meaning when it is ground, wheat flour uses the entire kernel. This creates the brown color, heavier texture and richer flavor. White flour or all purpose flour removes the most nutrient rich parts, the bran and germ before grinding.  This makes the flour white, and lighter with a milder flavor.

  • Nutrition: Because of the way whole wheat flour uses the whole kernel it is considered healthier. It is an excellent source of protein, fiber and a variety of vitamins and minerals. For half a cup of whole wheat flour you get 8 grams of protein, and 8 grams of fiber.
  • Buying: When shopping for whole wheat flour watch your labels and make sure they say 100% whole wheat. There are lots of labels that seem like they should be whole wheat but aren’t completely.
  • Substitutions: Whole wheat flour can be used in equal amounts as white or all purpose flour in any recipe. Remember that it will have a different texture and color than if you used white flour. If I am substituting in whole wheat flour for white flour, I usually do half and half to start with. Then I can tell how the recipe will respond to the different flour. Sometimes you just need to use white flour. But not in these pancakes!

Tips to Make Light and Fluffy Pancakes

I love using buttermilk and I firmly believe it should always be involved when pancakes are concerned. It creates such light, fluffy and flavorful pancakes. It’s pure heaven! There are a few things to remember when using buttermilk however, for perfection every time.

  • Don’t over mix! There is a chemical reaction between the buttermilk (the acid) and the baking soda (base) that creates those gorgeous bubbles. If you over mix the batter you’ll squash all the bubbles.
  • Use immediately! Like all chemical reactions, after time it just fades. Do not make this batter ahead of time and let it sit. All the bubbles will fizzle out. You can mix the dry and wet separately ahead of time and then combine them right before you’re ready to cook.
  • Fresh whole wheat flour: Make sure your whole wheat flour is fresh. Many times whole wheat flour gets a bad rap for tasting bitter, but that’s only because the flour has gone bad. Because it has the whole kernel it also has its natural oils which will cause it to go rancid faster. Store whole wheat flour in the fridge or freezer for longer shelf life.
  • Mix wet ingredients separately: If you find it hard to mix everything up without over beating it, mix all the wet ingredients separately before adding it to the dry.
  • White whole wheat flour: White whole wheat flour is made from a white wheat kernel, whereas whole wheat flour is made from a red wheat kernel. Whole White Wheat has the same nutritional value as whole wheat, but is lighter in both color and texture. Many prefer to use whole white wheat because it more closely resembles white flour. Again the key is to use WHOLE White wheat!

Variations when Creating the Best Whole Wheat Pancakes

The beauty of all pancakes is how easy they are to customize and make delicious! With such a wonderful tasting base, that’s even healthy, the sky’s the limit here!

  • Add Ins: Add in berries, nuts, chocolate chips, bananas or even crumbled bacon for diversity and fun.
  • Flavorings: Add in 1/2 to 1 teaspoon of any of your favorite flavorings. Think classic vanilla, butter flavoring, almond, or coconut extracts.
  • Toppings: Top these extraordinary vittles with berries, nuts, syrup, buttermilk syrup (yum!), peanut butter, jam, chocolate chips and of course maple syrup. Oh wait! Don’t forget the whip cream!

How to Store Whole Wheat Flour Pancakes Properly

  • Freeze: I love to make a double batch and cook lots of extras to freeze for quick breakfasts in the morning. To freeze leftover pancakes, let them cool completely on a cooling rack. Individually wrap pancakes in plastic wrap and place in a Gallon freezer bag. You can also just place them in a gallon freezer bag separated with wax or parchment paper. They will keep for up to 3 months.
  • Reheat: To reheat place frozen pancakes on a paper towel lined plate and microwave for 30 sec, flip and cook for another 30 sec or until heated through. You can also toast the pancakes in your toaster for a crispier outside.

Juicy Air Fryer Hamburgers

Juicy Air Fryer Hamburgers are the best burgers you will ever have, hands down! These are so succulent, they just might replace your grilled burgers forever!

Hamburgers are meant to go with salads. Serve this up with some of my favorites like Strawberry Pretzel Salad, Incredible Bacon Ranch Pasta Salad, or Summer Corn Salad. They are all luscious!

The Best Air Fryer Burgers

I have never had a more juicy and tender burger in my life!  What is it about the air fryer that just cooks everything so perfect? I don’t quite understand all the science behind air fryers but that doesn’t matter. I just know how well everything I have tried in the air fryer comes out! Perfect, every single time! I should tell you though, an air fryer isn’t actually a fryer. It uses forced air to circulate around the food to cook it, crisp it and make it magical. It’s almost more of a convection oven. If you haven’t tried an air fryer yet, it’s time!

These air fryer hamburgers couldn’t be any easier and they so mouth watering good! I love that I can have a juicy hamburger any time I want, even if isn’t grilling weather outside. Of course once you taste these, you may never use the grill again. And using the air fryer eliminates pan frying them where they simmer in their own fat. So yes it’s a bit healthier than pan frying but about the same healthiness as grilling, but the flavor and juiciness is unparalleled! You’ve got to try these ASAP!

Hamburger Ingredients

This recipe is my absolute favorite way to make burgers. If you have a favorite combination of seasonings, go ahead and use them. These are very customizable.

  • Ground Beef: 80/20 beef is what I used with great success.
  • Garlic: Minced or crushed garlic makes it easy to mix in.
  • Salt and Pepper: Season to taste
  • Worcheshire Sauce: Adds incredible flavor
  • Buns: Pick your favorite kind! I prefer sesame seed bun but any will do!
  • Optional Toppings: Think cheese, lettuce, tomatoes, pickles and red onions

How to Make Hamburgers in an Air Fryer

Super simple and easy you’re going to love this for the next time you get a craving for a great juicy hamburger!

  1. Mix: In a medium bowl combine the hamburger, garlic, salt and pepper and worcestershire sauce. Gently mix till combined
  2. Shape:  Shape into 4 patties. They will shrink when cooking so keep that in mind.
  3. Cook: Place 2 patties in the fryer basket. Cook at 360 degrees for 5-8 minutes. Flip and cook for an additional 5 min or till internal temp registers 160 degrees.
  4. Cheese: If you are using cheese, add it to the top of the patty and cook for 1 more minute till it’s melted.
  5. Top: Place burgers on your buns and top as desired.

Can You Make Frozen Hamburgers in the Air Fryer?

Yes, air frying hamburgers works for both fresh and frozen! It just takes a little more time to cook is all. I did lower the temp by 10 degrees so that the outside doesn’t cook too fast before the inside gets done. So either way you make your burgers, they’ll be perfect every single time! YUMMY!

  1. Place your frozen patties in the air fryer.
  2. Cook at 350 degrees for a total of about 20 min.
  3. After the first 10 minutes flip your burger and check for doneness. Adjust the cooking time accordingly.
  4. During the last minute of cooking add your cheese to melt.
  5. There are many different sizes and types of patties, as well as many different air fryers. Check your air fryer manual and use this as a guide. Adjust the cooking time accordingly.

Tips for the Juiciest Hamburgers

Hamburgers have German origins, although the exact history of these tasty hamburgers is still up for debate. Where ever they came from hamburgers and especially cheeseburgers are definitely equated as an all American staple. Burgers are just so good I rarely think about where they came from, just when will I have them again!

  • Shaping: Whether you’re a circle or square patty advocate, push your thumb into the center creating a divot in the patty. This will prevent it from shrinking too much and cooking it unevenly.
  • Hamburger:  I used 80/20 for this recipe. You want the fat to help create juiciness and flavor. You can go as lean as 85/15 but that’s about as lean as I would go before you start ending up with dry tasteless patties.
  • Variations: Hamburgers are so versatile and customizable. Use different spices and sauces to diversify the flavors. BBQ sauce mixed inside, onion powder, chili powder, paprika, smoked paprika, seasoned salt, BBQ seasonings, all would be amazing. Let your taste buds get creative to what you’d like to try!
  • Toppings:  Anything goes here really. Again get creative. Make it Hawaiian with grilled pineapple and BBQ sauce. Sauté mushrooms and melt Swiss cheese. Use crispy bacon and avocado with Monterey Jack Cheese.  Put pickled jalapeños and pepper jack cheese for a spicy twist. They will all be divine!

Is it Safe to Eat My Burger when It is Pink Inside?

Everyone likes their burgers done a little bit differently. For safety reasons health officials recommend that ground beef be cooked thoroughly. This is because the bacteria that is found on the outside of beef is mixed throughout the meat when it is ground. With meat such as steak, or roast the surface gets cooked killing any bacteria that might exist. This makes it ok for steak or roasts to be pink inside and eat it pink, even rare.  This is because there isn’t bacteria found on the inside.

Unfortunately, undercooked ground beef is dangerous because the bacteria can get mixed up inside during the grinding process. If not properly heated through it won’t kill the bacteria. Be sure to cook your hamburger till the thickest part registers 160 degrees Fahrenheit for safety reasons.  Your burgers still may be pink inside but as long as it registered 160 degrees you will be safe.

Don’t Forget the Fries!

While your topping your burgers place the fries back in the air fryer on 360 for 2-3 min to reheat and serve with this Famous Fry Sauce! The fry sauce is amazing on the burgers too!

  • In a medium sized bowl combine the ground beef, garlic, Worcestershire sauce, and salt and pepper. Shape into four patties. I make my patties flat and round because they do shrink in the air fryer.
  • Place two hamburger patties into the air fryer. Cook at 360 degrees for 5 minutes. Flip the patties and cook for an additional 5 minutes.
  • If using cheese, top with cheese and cook for an additional minute in the air fryer to melt. Place on hamburger bun with desired toppings.
