The Perfect Crunchy Caramel Corn

Crunchy caramel corn is absolutely divine! This classic crunchy snack delivers on that deep, rich caramel flavor that we all know and love! Eat it at home or on the go…Either way, you’re going to be hooked!

The rich, sweet taste of caramel gets me every time! I am loving caramel these days and if you’re like me, will want to try all of the recipes! This Apple Pie, these Brownie Bites, and these amazing Cinnamon Rolls are the absolute best!

Caramel Popcorn

Ok, can we talk about caramel corn for a minute? There are SO many options out there that I never know which one will be good or not. And let’s be honest, more often than not, they aren’t the best! Until I made this one!! It is SOO GOOD and is the perfect amount of crunch. It doesn’t feel like it’s going to break your teeth but it’s not ooey-gooey and messy. The caramel flavor is not overly sweet which means I can eat a LOT of this before getting sick of it!

I love snacks that I can bring with me on the go and this one is exactly that. Once you make this and let it cool, I like to put it in some snack bags and bring it for my family! We’ve brought it to movies, sporting events (take me out to the ballgame!), and on family walks. You can also bring this as a quick and easy dessert to a party. Try it out and I bet that it will become your go-to snack that your whole family loves! In fact, bake up some turtle rice Krispie treats and some classic muddy buddies and you will have the whole neighborhood asking when your next party will be!

What You Need to Make Homemade Caramel Corn

If you are looking for an easy snack to make, this crunchy caramel corn is it. There are only 6 ingredients that you will need and then you’ll be well on your way to munching and crunching! See the recipe card below for exact measurements.

  • Popcorn kernels: I like to double check and make sure my kernals are fresh! Old popcorn kernals don’t fully pop and definitely don’t taste as fresh!
  • Brown sugar: Brown sugar brings in that deep, rich flavor of caramel.
  • Butter: I like to use unsalted butter so that I am not adding in too much salt to the flavor.
  • Karo syrup: Karo syrup is mixed in to bind all of the ingredients together!
  • Sweetened condensed milk: If I could pick one of my favorite sweet ingredients of all time, this would be it! This is what will make this caramel stand out!
  • Baking soda: When you use baking soda it will react with the brown sugar and corn syrup! It helps the caramel get that soft texture.

Let’s Pop Some Popcorn!

This crunchy caramel corn is not only delicious but is simple to make! I always like to make a little extra because it gets eaten up so fast at our house!

  1. Pop the popcorn: Pop your popcorn kernels in an air popper machine and pop into a large bowl. Set aside.
  2. Mix, boil, add the sweetened condensed milk: On medium high heat in a medium saucepan, cook the brown sugar, butter, and karo syrup. Allow it to come to a boil and then add sweetened condensed milk.
  3. Boil: Allow to softly boil for about 3-4 minutes until it gets to the softball stage. Be careful to not cook to long and allow it to burn.
  4. Add baking soda: Remove from heat and then carefully stir in baking soda.
  5. Pour and mix: Pour the caramel over the popped popcorn then mix with a wooden spoon to make sure that it can all be coated evenly.
  6. Bake and stir: Preheat your oven to 250 degrees and then pread the popcorn evenly on a parchment lined baking sheet. Bake for 45 minutes stirring every 15 minutes. (It’s ok if there are clumps.)
  7. Cool and break up clumps: Remove from the oven and then let it cool. Go ahead and break up any clumps and enjoy!

Tips and Tricks

Crunchy caramel corn is the best and everyone loves it! Here are a few of my tips and tricks that will make eating this snack that much better!

  • Put it in the bag: I like to make individual servings of this popcorn! You can put it into cute, themed cellophane bags for a party favor or regular ziplocks for individual treats to bring on the go!
  • Get rid of unpopped kernals: There isn’t anything worse than biting into caramel corn and a surprise unpopped kernal almost breaks your tooth! To make sure that this doesn’t happen then you should try this trick! Once you are done popping your popcorn then grab a cooling rack and place it on top of a baking sheet. Pour all of your popped popcorn onto it. Your popcorn will stay on top while all of the unpopped kernals fall through the rack! Then, take those kernals and thrown them away. Put your popcorn back in the bowl and you don’t have to worry about those surprise kernals again!
  • Add toppings: If you want to jazz this up with some toppings then try adding some sprinkles, some extra salt (for salted caramel corn) or even some m&m’s to your popcorn. Add any toppings on just before you place this in the oven to bake!

How to Store Leftovers

My favorite part about crunchy caramel corn is that it keeps so well! You can have this treat for a few days….If you can make it last that long!

At room temperature: Once the caramel corn has cooled, then store it in a sealed airtight container. It can last on your counter like this for up to a week! Enjoy!

Pumpkin Pie Dip is AMAZING!

I love pumpkin pie. I love dips. So of course, the combination of the two is calling my name! Sweet dips are some of my all-time favorite snacks and appetizers! The taste of this dip is incredible! It has that yummy pumpkin spice flavor combined with sweet whipped cream. The spices that are used will totally create that sense of fall and holidays. Dips are a great option to bring to a party and this one will knock everyone’s socks off. It’s all of the benefits of a pumpkin pie without taking all of that time to bake! It’s a win-win!

Dips are so versatile and I love that depending on what you dip in it, it tastes different every single time. This dip is no exception! I absolutely love dipping in fruit, cookies, and graham crackers in. And if I am being completely honest, this dip is so good that I could just eat it by the spoonful. It’s THAT tasty! What’s IN Pumpkin Pie Dip?

If you are looking for a slam dunk recipe that doesn’t take a lot of time and ingredients, then you’ve come to the right place! Using only 5 ingredients, you will have this pumpkin pie dip whipped up in no time! See the recipe card below for a list of exact measurements.

  • Cream cheese: If you set your cream cheese out to soften beforehand then it will mix up better and create a smooth texture!
  • Pumpkin puree: Don’t confuse this with pumpkin pie filling! Pumpkin puree should be the onky ingredient listed on the can.
  • Powdered sugar: If you use this instead of granulated sugar, then it will dissolve faster and help add to that creamy texture.
  • Pumpkin pie spice: You can buy this at the store but I highly recommend taking a few minutes to make this homemade pumpkin pie spice instead! Because homemade makes everything taste better!

  1. Beat: In a medium sized mixing bowl beat together the cream cheese and pumpkin puree then, add in the powdered sugar and beat until incorporated.
  2. Mix and serve: Add in spices and heavy whipping cream and beat until dip is set and stiff peaks form. Once you are done, go head and serve it with graham crackers, gingersnap cookies or sliced apples!

What Can I Dip in This?

This pumpkin pie dip is rich and creamy and the taste is so sweet! It goes with so many things but I thought I would list out a few ideas for you!

  • Apples: Slice up some apples and put them on a plate with this. They wil disappear so quickly!
  • Bananas: I absolutely love bananas with this dip. Create a fruit platter and add some bananas to it!
  • Gingersnaps: The sweet taste of a gingersnap cookie combined with this dip is to die for!

3 Ingredient Pumpkin Chocolate Chip Cookies

Easy as 1,2,3, these delicious pumpkin spiced chocolate chip cookies are super quick and tasty! When you only have three ingredients it can’t get much easier than that, but you won’t sacrifice on flavor!

We love serving these up in a pinch when I need a quick dessert that doesn’t take all day to put together and is a crowd favorite. Try these other quick 3 ingredient sweets. Easy 3 ingredient Peanut Butter Cookies and 3 ingredient Brownies.

Pumpkin Chocolate Chip Cookies

I almost feel like I’m cheating when I use this recipe, it’s so good and so quick and uncomplicated. Friends and family will love these and they’ll think you worked really hard to make them. Shhhhh! Don’t tell them just how easy these amazing cookies really are. The cake mix helps give the cookie a nice soft cake like texture that’s sure to please everyone. Pumpkin adds the moisture, and chocolate, well everything is just better with chocolate.

I love to use this recipe for when I’m short on time but need a dessert that is still going to wow! It’s got all the fall flavors everyone loves and all the simple-ness you’ll appreciate. I’d buy some cake mix to stock up, you’ll be making these a lot!

What you need for 3 Ingredient Cookies:

3 is all you need!

  • Spice Cake Mix– Using a spice mix adds the spice you need without the hassle
  • Canned Pumpkin– Make sure it’s not pumpkin pie filling
  • Chocolate Chips- Chocolate is must in pumpkin cookies

Baking Pumpkin Cookies:

Making the cookies is as simple as the ingredients!

  1. Prep– Line a baking sheet with parchment paper and preheat oven to 350 degrees.
  2. Mix– In a medium bowl mix the cake mix (just the powder) and pumpkin  together till there are no more lumps. Stir in the Chocolate Chips.
  3. Bake– Drop by rounded tablespoons 2 inches apart on cookie sheet. Bake for 13-15 minutes till a toothpick inserted comes out clean. Cool for 5 min on sheet pan before transferring to a rack to cool completely.

Tips and Variations:

Rich sweet chocolate is surrounded by soft tender spiced pumpkin baked to cookie perfection! Our secret ingredient that makes these so amazing and quick is that you use a cake mix!

  • ADD INS– Substitute the Semi sweet chocolate chips for mini chocolate chips, milk or dark chocolate chips. Add in raisins, or nuts or oats for extra texture (about 1/2 cup).
  • Cake Mix- Can’t find a spice cake mix you can use a white, yellow or vanilla cake mix. Add in 2 teaspoons of pumpkin spice to add in that classic taste.
  • Lumps- It can be hard to get the lumps out of the cake mix. Sift the cake mix before adding in the pumpkin to get rid of clumps.
  • Egg- If you find your cookies are too dense you can add an egg to make it a bit lighter. It won’t be 3 ingredients anymore though. 🙂
  • Bake– Do not undercook these cookies, as they cool they will become gummy, make sure the edges start to brown and a toothpick comes out clean.

Storing Chocolate Chip Pumpkin Cookies:

  • Storage-These cookies will keep best lightly covered. If you store in an airtight container they will become sticky. Lightly cover and keep on your counter for up to 4 days. You can store them in the refrigerator to extend that time up to 8 days.
  • Freeze– Completely cool the cookies and store in a freezer safe container or bag for up to 3 months. Thaw on the counter.
