Double Chocolate Zucchini Brownies

Perfectly moist and chocolatey, these double chocolate zucchini brownies are filled with chocolate chips and topped with chocolate frosting. Simple and delicious and you won’t even be able to tell that 2 cups of zucchini is hidden inside!

Double Chocolate Zucchini Brownies

Zucchini is popular vegetable in the summertime. Zucchini is a highlight and I have several tried and true recipes like this Cake, Muffins, or the Perfect Chocolate Chip Zucchini Bread, these are rich, and fudgy just like a brownie should be. They won’t be cakey but have that classic brownie texture we all love. These are made in a 9×13 and its all in one pan, so these are the perfect dessert to take to potlucks, parties and big family gatherings. Your family and friends are going to love these!

I love watching my boys devour these and tell me that they are the best brownies that they have ever had. Little do they know that there are 2 cups of zucchini hidden inside. Muah haha! The zucchini makes these brownies so moist. And because you can never have enough chocolate I added some chocolate chips inside! It was so delicious with the chocolate chips hidden inside. But the chocolate frosting… it is a MUST! These brownies are so rich and are a total chocolate lover’s heaven! The best way to use up that zucchini and are especially good with a cold glass of milk. You are going to love them!

Ingredients For Zucchini Brownies

Super easy to make, no one will know there are vegetables inside.

  • Canola oil: Canola oil is a mild oil that won’t impart a ton of flavor so it is a great baking oil.
  • Sugar: Use white granulated sugar, it will help cut the bitterness of the cocoa and add moisture to the cake.
  • Vanilla extract: Vanilla actually helps chocolate taste more like chocolate, so do not leave it out.
  • All-purpose flour or unbleached: Both of these flours work great in baked goods. They provide structure and density.
  • Unsweetened cocoa: You can use natural or dutch cocoa for this recipe. They both add color and rich chocolate flavor.
  • Baking soda: This is the leavening or rising agent for the brownies that will help give them a bit of a lift.
  • Salt: Regular table salt is just fine, and will provide balance and flavor that is essential.
  • Zucchini shredded: Shred the zucchini as finely as possible so it doesn’t have chunks.
  • Chocolate chips: You can use regular, dark, or even milk chocolate chips.

Chocolate Frosting

  • Cocoa powder: Again natural or dutch cocoa powder will work for the frosting.
  • Powdered sugar: Using powdered sugar will create a smooth frosting instead of grainy.
  • Butter melted: You want the butter melted so it can thin the icing and mix thoroughly.
  • Milk: Any percentage of milk will work here, if you need to thin it out add just a splash more till it’s the right consistency.
  • Vanilla extract: Sweet vanilla adds the best flavor and helps the chocolate intensify in flavor.

Let’s Make Some Double Chocolate Zucchini Brownies

You are going to love how these taste and look. The frosting is the key!

  1. Prep: Preheat oven to 350 degrees. Line a 9×13 inch pan with aluminum foil and lightly spray with cooking spray. This allows for easier removal.
  2. Mix: In a medium-sized bowl add oil, sugar, and vanilla extract in a bowl until combined and crumbly.
  3. Combine: In another bowl combine flour, cocoa, baking soda, and salt. Add the sugar mixture to the flour mixture.
  4. Add: Stir the zucchini shreds into the batter until thoroughly incorporated. At this point, it may seem very dry and thick. Keep mixing and the zucchini will moisten the batter. Add in the chocolate chips.
  5. Bake: Spread the batter into the bottom of your 9×13 inch pan. Bake for 25 minutes or until the brownies are fairly firm and begin to pull from the sides of the pan. Allow brownies to cool.
  6. Frost: Add cocoa powder, powdered sugar, and butter to a small bowl and whisk. Add in milk and vanilla and continue to whisk until smooth. Spread over brownies.

Chocolate Zucchini Brownies Recipe

Fudgy, rich, decadent and chock full of zucchini, these will disappear fast.

  • The Batter: You will notice the batter is pretty dry until you add the zucchini. That is ok, the zucchini is the main source of moisture, if you stir and stir and it is still not moist add a splash of milk.
  • Size Matters: The larger the zucchini the drier it will be. Use a medium or small zucchini for this recipe you want moisture but not too much.
  • Grating Your Zucchini: To start, you can peel your zucchini, but only if you want to. I usually do not, but if you are worried about the green flecks showing and giving away your secret, you might want to. Grate the zucchini or you can chop it in a food processor, use the smallest holes. You will not have to drain or pat the zucchini dry for this recipe as the zucchini is the main source of moisture.
  • Cocoa Powder: There are two kinds of cocoa, natural or dutch. The main difference is that the dutch processed cocoa has been treated to take out some of the acidity of the chocolate. It usually has a richer, smoother flavor. I like to use natural in the brownies and dutch in the frosting.
  • Chocolate Chips: You can leave the chocolate chips out if you desire, use milk chocolate chips if you want a bit of a sweeter after taste. I used regular semi-sweet chocolate chips.
  • Frosting: You will want to sift the powdered sugar so it mixes up easily and without any lumps. The frosting is so good and is the perfect topping for these zucchini brownies, don’t skip it!

Storing Your Double Chocolate Zucchini Brownies

If you are fortunate to have leftovers you will want to keep them moist for the next day.

  • Store: Keep brownies tightly covered at room temperature for up to 3 days or you can keep them in the fridge for up to a week. Many of my family like these straight from the fridge best anyway!
  • Freeze: These freeze beautifully and can be made ahead of time. Do not frost brownies before freezing for best results. Freeze unfrosted brownies tightly wrapped and covered for up to 2 months. Thaw at room temperature and frost when ready to serve.

Pizza Pinwheels

Pizza Pinwheels Recipe

Pizza pinwheels is the most fun way to eat pizza ever. After assembling your pizza, roll it up then slice it into rounds and bake it. The round, handheld bites are way more exciting to eat than the traditional triangles.

They’re also extra cheesy as some of the cheese melts out and and gets crispy around the edges. And who doesn’t love crispy cheese? It’s one of the best things in the world! This recipe is kid-friendly and was deemed, “the best pizza ever” by our youngest taste-tester. When you need to get a quick lunch or dinner on the table, this is the recipe you want to make!

How to Make Easy Pizza Pinwheels

These easy pinwheels is an incredibly simple recipe made in just four steps. If you’re using store-bought pizza dough and sauce you’ll have your pizza pinwheels on the table in about 30 minutes.

  1. Prepare Dough: Lay the dough out on a flat surface. We use the backside of an 18″x13″ baking sheet as it’s just the right size.
  2. Sauce: Spread a thin layer of pizza sauce over the dough then add your toppings and cheese.
  3. Pinwheel: Roll the pizza into a log then slice it into 8 pieces.
  4. Bake: Bake the pizza then dig in!

What Kind of Pizza Dough Should I Use?

The pizza pinwheels in the pictures are made with Pillsbury pizza crust. This crust is the type in a tube that pops open. Other types of store-bought pizza dough will work, too. If you’re feeling a bit more adventurous and want the best crust ever, try our no knead pizza dough. You’ll need to think ahead as it takes a bit of time to rise, but it is 100% worth the wait!

What Kind of Pizza Sauce Should I Use?

In recipe testing, we used store-bought pizza sauce. For us, pizza pinwheels are a quick and easy recipe so we usually reach for the jar of pizza sauce in our pantry when making them. But nothing beats homemade pizza sauce. If you have an extra 15 minutes to spare, try making this easiest homemade marinara sauce to use on the pizza. You won’t regret it!

You can also try other pizza sauces like pesto, alfredo sauce, or buffalo sauce.

Pinwheel Pizza Toppings to Try

You can use all your favorite pizza toppings to make pizza pinwheels. A word of warning: don’t go crazy and add a ton of toppings or the pinwheels may fall apart; less is more!

Here are a few of our favorite combinations:

  • Pepperoni + sautéed mushrooms
  • Cooked Italian sausage + red peppers + onions
  • Pepperoni + olives + green peppers
  • Pesto + artichoke hearts + feta
  • Crispy bacon + caramelized onions + spinach

Should I Serve Pizza Pinwheels with a Dip?

While these pizza pinwheels don’t technically need a dip, dipping makes eating more fun. Mix it up or try new things! These dips are perfect for dipping and adding to the flavor.

Can Pizza Pinwheels Be Reheated?

Yes! While pizza is always best fresh, leftovers can absolutely be reheated. They are best warmed up in the oven or for a few seconds in a microwave.

Ingredients

  • 1 pizza dough (see notes)
  • ½ cup pizza sauce
  • 3 ½ ounces thinly sliced ham
  • ½ cup pineapple tidbits
  • 10 ounces shredded mozzarella
  • 2 tablespoons minced chives (optional)

Instructions

  • Preheat your oven to 425 degrees.
  • Form the pizza dough into a rectangluar shape. The backside of an 18"x13" baking sheet works great for this.
  • Spread the pizza sauce over the dough, leaving ½ inch without the sauce at one of the short ends. Add the ham, pineapple, and mozzarella over the sauce.
  • Roll the pizza, starting at the short end with the sauce right to the edge. Use the edge without the sauce to seal the roll, pinching the dough together a little, if necessary.
  • Cut the pizza roll into 8 equal pieces. Place the pieces on a non-stick or parchment paper-lined pan. Bake for 20 minutes, until the pizza dough is cooked. Sprinkle the top with some minced chives, if using.

Notes

This recipe was tested with store-bought pizza dough – the type in a tube that pops open. If you’d like the best dough, use our homemade pizza dough recipe.

Avocado Basil Pasta Salad

This is probably one of the best pasta salads that I have ever made. I LOVE fresh avocado and when combined with fresh tomatoes and basil, it takes pasta salad to a whole new level of amaizng! And if that wasn’t good enough, you can top it with crumbled bacon and shredded parmesan cheese all tossed with a dash of lemon, oil and garlic. This avocado basil pasta is going to be a huge hit at your next get together!

The ingredients are simple and this avocado basil pasta is super easy and quick to throw together. This is the perfect pasta salad for any occasion! Take this to your next BBQ, potluck or family dinner and watch it disappear. Everyone is going to love the fresh light flavors in this avocado basil pasta salad. It’s not heavy so it’s a perfect summer salad to add to your menu. Seriously, this is a MUST make!

Ingredients For Basil Avocado Pasta Salad

This basil avocado pasta salad is easy to throw together and make for a delicious side dish! For all pasta ingredients scroll to the recipe card for exact measurements.

  • Dried bow-tie and/or wagon wheel pasta: Any type of pasta will work here really, but the bow-tie or wagon wheel just makes it fun and the kids love the wagon wheels.
  • Avocados: Halved, seeded, peeled, and coarsely chopped, look for firm avocados that give slightly to pressure. They should be free from dents and bruises.
  • Ripe tomatoes: Roughly chopped, I like to use Roma tomatoes because they are firm, flavorful, and not overly juicy.
  • Bacon: Crisp-cooked drained and crumbled, if you are short on time, they have pre-cooked crumbled bacon you can purchase at the store. Avoid bacon bits that are artificial and full of preservatives.
  • Fresh basil: Fresh basil can be found in most produce sections, look for bright firm leaves that are fragrant. Chop the basil finely.
  • Lemon juice: This will brighten the flavor as well as help the avocado from turning brown too quickly.
  • Olive oil: Olive oil adds flavor and will also help keep the ingredients fresh.
  • Garlic: Use fresh minced garlic for the best flavor. Jarred garlic can be used in a pinch.
  • Ground black pepper and Salt: Using freshly ground pepper will give the salad a nice punch of flavor. Add to taste.
  • Parmesan cheese: Use shredded parmesan instead of grated or shaved. It blends the best and still adds great flavor.

How to Make Avocado Pasta

Serve immediately, the avocados will go brown the longer it sits. Avocado Basil Pasta salad can be made an hour ahead of time however leave out the avocado until ready to serve. With a simple toss it will all look amazing when served chilled!

  1. Pasta: Cook the pasta according to package directions. Rinse and set aside.
  2. Mix: In a large bowl combine the avocados, tomatoes, bacon, basil, lemon juice, olive oil, garlic pepper, and salt. Add the pasta and toss to combine.
  3. Serve: Transfer to a serving bowl and sprinkle with cheese.

  • Avocados: Avocados can be tricky to buy, when buying your avocados, keep in mind when you want to make the avocado basil salad and buy accordingly. Too early and they’ll be overripe, brown, and bruised. Not early enough and they can be rock hard. To speed up the ripening of an avocado place it in a paper bag rolled up tightly. Add a banana to the bag for even faster ripening. it should yield to firm gentle pressure.
  • Pasta: Be sure to salt your pasta water for the best tasting pasta, it’ll give it impeccable flavor. I like to use bowtie or wagon wheel pasta because it is fun and whimsy, but any pasta will do.
  • Tomatoes: Deseed your tomatoes so that the salad doesn’t get too juicy. You can also use grape or cherry tomatoes if you want. They do not have to be deseeded.
  • Basil: Stick to fresh basil, dried basil just won’t give you the same flavor.
  • Add-Ins: Make this avocado basil pasta your own by adding in cucumbers, bell peppers, or olives. Add a splash of balsamic vinegar for a bit of a zing. This salad is very customizable.

What to serve with This Summer Salad

Avocado Basil Pasta Salad is one of those side dishes that go perfectly with your summer BBQ or Picnic. It’s not a heavy mayo-based salad so it’s ideal for transporting. The avocado creates a creaminess that is a mouth full, but it’s still light and refreshing with the basil, tomatoes, and lemon juice.
