You can also switch up this pizza roll easily! Change out your sauce to BBQ sauce and add in some cheese and cooked grilled chicken. Or instead of pepperoni, you could add in some ham and pineapple! Ingredients in a Pepperoni Roll

The main list of ingredients is so easy and simple! And like I said, you can add or take away whatever you need to make this your own! See the recipe card below for a list of exact ingredient measurements.

  • Rhodes white bread: I like to keep things simple and just buy the dough already pre-made!
  • Pepperoni: Switch this up for any kinds of meat that you like! Or, go ahead and add even more in addition to the pepperoni.
  • Pizza sauce: You can get pizza sauce from the store or you can use some Homemade Pizza Sauce
  • Mozerella cheese: This classic cheese is perfect for this recipe! Use as much or as little as you would like!
  • Parmesan cheese: You can use shredded parmesan cheese or the kind from the can in your fridge!
  • Garlic salt: By garnishing the tip with this, you get the best subtle flavor added to the pepperoni roll!
  • Butter: You will need to melt you butter to use to brush on top of the pepperoni roll. This give it that crisp, golden brown color and texture.

How to Make a Pepperoni Roll

This dinner is perfect for those busy nights when you are running all over the place! It only takes 20 minutes and is so delicious!

  1. Prepare the pizza: Let bread thaw out from the freezer for a few hours. Roll the dough out to about an 11×11 square. Spread your sauce with a large spoon and then add on your mozzarella cheese. Lay the pepperoni in rows covering the top. Roll the dough up.
  2. Brush on butter, add garnish and bake: Melt the butter and brush it on top of the rolled dough. Sprinkle it with parmesan cheese and some garlic salt. Bake at 375 for 15-25 minutes.

Ideas for Different Toppings

These pepperoni rolls are so easy to change up! You could make them different each time and then still have them often. If you do this then no one will ever get sick of them! Here are a few ideas:

  • Meat: You can add in different meats! Try ham, sausage, salami, canadian bacon, grilled chicken or even cooked regular bacon!
  • Sauce: Change up the sauce and then make it an entirely different pizza! You can try alfredo sauce or this homemade BBQ sauce.
  • Toppings: This is where you can really switch things up! Add in olives, peppers, tomatoes, pepperoni… Really, anything that you love on a pizza, throw it on now! It will not only change up the taste but it adds in some healthy toppings as well!

Dip It!

If you want to level up this pepperoni roll then you can make some dips for it! Slice it up and put them on a platter with some Homemade Pizza Sauce, Homemade Ranch Dressing, or some Homemade Marinara. This takes it from an easy meal to a delicious appetizer or even an after-school snack!

How to Store Leftovers

You can double the recipe and eat these for leftovers all week! They are super delicious!

Homemade Toffee

Homemade toffee is super simple with no candy thermometer required! This buttery chocolate treat is a must-make recipe this holiday season.

I love this time of year because of all the desserts! For even more sweet goodies, be sure to try my peanut brittle, caramels, or this delicious fudge!

A closeup stack of 4 pieces of toffee.

Easy and Delicious English Toffee Recipe

Chocolate and toffee have always been one of my favorite combinations. I loved Skor bars growing up, and to this day still get super excited when there’s toffee around. That’s why I love this time of year! You start to see things like toffee, brittle, peppermint bark, and everything pumpkin spice appear in the stores! So, to ring in the colder weather and delicious desserts… I present to you- my favorite homemade toffee recipe. It’s as easy as it gets! And the best part is, you can make it without a candy thermometer! Whether you’re a seasoned baker or just starting out, this is a delicious foolproof recipe. It’s going to become one of your favorites!

This recipe starts with a layer of buttery, golden-brown toffee. It only takes 4 simple ingredients to make! It is then layered with almonds, pecans, and smothered in melted milk chocolate. It’s the best one-pan dessert to make, and perfect for feeding large groups of people! It’s always a crowd-pleaser. As long as the ratios are the same, you can switch out the nuts and chocolate for any kind you prefer! You can even omit the nuts entirely. It’s up to you! No matter how you choose to make it, homemade toffee has an incredible flavor you won’t be able to get enough of.

Ingredients for Homemade Toffee

Homemade toffee is made up of all inexpensive ingredients. You might even have them all in your pantry! The short, simple ingredient list makes this perfect for making big batches of toffee on a regular basis this holiday season. It’s the simplest ingredients that always create the most delicious result! If you’re looking for measurements, you can find them in the recipe card at the end of the post.

Toffee

  • Butter: This is what makes your toffee rich and creamy! I like to use salted butter here.
  • Sugar: A must for the perfect sweetness! Granulated sugar works best. It melts down and makes the most amazing caramelized color!
  • Salt: Salt is added to balance sweetness and enhance overall flavor.
  • Vanilla: If you add pure vanilla extract, your homemade toffee will have a richer flavor with more depth.

Nuts and Topping

  • Almonds and Pecans: A mixture of both almonds and pecans is used here. I like the chewy texture of almonds paired with the buttery texture of pecans. They pair so well with the flavors of chocolate and toffee!
  • Milk Chocolate Chips: Added on top for the melty chocolate layer! You can substitute this with dark or white chocolate, as well.

How to Make Toffee at Home

Making homemade toffee isn’t as complicated as you would think! In just a few simple steps, you too can enjoy this buttery chocolate treat! It’s the best!

  1. Toast Almonds: Let’s make some toffee! To start, get all of your ingredients measured and set out before you start the recipe. Then, place your almonds on a plate and microwave them for 2-3 minutes on high to toast them.
  2. Prep Baking Sheet: Line a baking sheet (preferably a 9×13 pan) with foil and place the almonds in a single layer on the foil – space them out as best you can.
  3. Melt Ingredients Together: Add sugar, butter, vanilla, and salt to a large sauce pan (at least 2-quarts and it needs to have a thick bottom. Don’t use a thin metal one or your toffee will burn!) and melt over medium heat, stirring throughout.
  4. Cook Toffee Mixture: When ingredients are completely melted, continuously stir and gradually increase heat to medium-high. Keep stirring, stirring, stirring for 9-15 minutes until the toffee is a golden brown color (similar to the color of the raw almonds). As soon as it reaches that color, quickly pour over almonds in your prepared pan.
  5. Layer Chocolate: Next, allow to cool for about 2-3 minutes, then sprinkle with chocolate chips. Allow to sit for another couple of minutes so the chocolate chips will melt, then spread over the toffee. Sprinkle with chopped pecans and allow to cool completely. (If you put the pan in the fridge it will speed up the process a bit).
  6. Break and Enjoy: After toffee and chocolate has completely cooled, use a butter knife to break apart the toffee. Store in an airtight container at room temperature.
Process shots of preparing mixture and adding to pan.

Tips for Making Successful Homemade Toffee

This toffee recipe is super easy and SO good! To make sure you get the best results each time, use these extra tips and tricks! Your next batch is going to be to die for!

  • Use Butter: Butter is a necessity when making candies like toffee. Butter substitutes like margarine have too high of a water content and will keep it from hardening. Plus, butter makes your homemade toffee rich and delicious!
  • Avoid Humid Days: If it’s too humid when you’re making toffee, it won’t set properly. This is why this recipe is perfect for colder, cooler weather. If it’s too hot and humid, your toffee will end up chewy.
  • Keep Temperature Steady: While this recipe doesn’t need a candy thermometer to make, one thing I will say is to keep your cooking temperature steady. Sudden drops or increases in temperature can make you candy consistency uneven.
  • Adding Flavors: Homemade toffee is an easy treat to customize. Sometimes I like to drizzle a little salted caramel sauce on top of the chocolate layer! You can also switch up the nuts for things like peanuts or cashews. Swap out milk chocolate for dark or white chocolate! Another thing that is super tasty is adding spice to your chocolate. You can add a little cinnamon, nutmeg, or even things like chai spice for a little extra fall flair.
Toffee broken up into multiple pieces.

Storing Leftover Toffee

Homemade toffee has a nice, long shelf life and can be enjoyed again and again. It’s perfect for giving to friends and family as a gift! Here’s how to store for best results!

  • At Room Temperature: Keep your toffee pieces in sealed bags or an airtight container. Make sure the toffee is away from any heat sources or it may melt. It will stay good for up to 2 weeks!

White Chicken Chili

White Chicken Chili is loaded with beans, chicken, green chilies and the most luscious creamy broth. A twist on a classic that’s perfect for a cold day. Serve it up with corn bread and a salad and your set for a satisfying comfort meal.

When someone says they’re having Chili they think of recipes like The Best Chili Ever or Instant Pot Chili, but this Chicken White Chili is going to surprise and wow your friends and family.

Creamy, savory, hearty White Chicken Chili.

White Chicken Chili Recipe

There’s nothing better than a bowl of hearty soup on a cold day. This white chicken chili is loaded with flavor and texture, and it’s ready in just 30 minutes! Serve this white chili with a variety of toppings or a side of cornbread for a meal the whole family is sure to love.

It’s such a different kind of chili and perfect for those who aren’t fond of beef or can’t tolerate the acid of tomatoes, but love that chili flavor. The creamy broth is deceptively spicy and mild at the same time. It’s a satisfying Mexican zesty soup that will warm you from the inside out.

White Bean Chicken Chili Ingredients

Nothing super fancy here combine for a fantastic flavor!

  • Olive Oil: To sauté the chicken onion and garlic
  • Onion: Chop the onion
  • Garlic: Minced garlic is best for flavor distribution
  • Chicken: You can use skinless boneless chicken breasts or thighs
  • Cumin: Classic Mexican seasoning
  • Coriander: Adds a wonderful flavor
  • Salt and Pepper: add more or less to taste
  • Chicken Broth: Can substitute vegetable broth
  • Green chilies: Canned chopped green chilies drained
  • White Beans: White beans are often called Great Northern beans
  • Sour Cream: This adds a deep richness and creaminess

Making Easy White Chicken Chili

Super easy for such a marvelous soup!

  1. Sauté: Heat the olive oil in a large pot over medium heat. Add the onion and cook for 3-4 minutes until translucent.
  2. Add: Put the chicken in the pot along with the cumin, coriander, salt and pepper.
  3. Cook:, stirring occasionally, until chicken is cooked through, approximately 5 minutes.
  4. Add: the chicken broth, green chiles and beans to the pot; bring to a simmer.
  5. Cook: for 10 minutes. Remove the pot from the heat and whisk in the sour cream.
  6. Serve: immediately with toppings of your choice.

Making creamy, savory, hearty White Chicken Chili.

Tips and Variations for the Best Chili

  • Dice: Keep your chicken the same bite sized pieces to cook evenly.
  • To Drain or not to Drain: This recipe calls to drain your green chilies but I often don’t. I like the extra kick of spice it adds to the broth. There isn’t that much to drain off either, so it’s easier to just dump it all in.
  • Heat: If you really want to spice it up you can use medium or hot chilies or even canned diced jalapenos
  • Toppings: Cheese, sour cream, avocado, cilantro, tomatoes, corn and tortilla strips are all favorite toppings.
  • Beans: I like to use the smaller great northern beans but you can also use white kidney or cannellini beans if you prefer.
  • Slow Cooker: To use a slow cooker, add everything to the slow cooker except the sour cream and cook on high for 4-6 or low 8-10. When done turn it off and add the sour cream, let it sit for about 10 min till heated through.
  • Instant Pot: Cook in the instant pot add everything but the sour cream and beans. Cook on manual for 20 min. Natural release for 10 min. Remove the chicken and shred. Return to the pot and add beans and sour cream. Allow to heat through for about 15 min and serve.

Storing Leftovers

  • Fridge: The soup keeps fantastically in the fridge for up to 5 days.
  • Freeze: You can freeze this soup. Cook as recipe instructs except do not add the sour cream. Freeze for up to 2 months. Thaw overnight in the fridge. Heat on the stove top on medium till hot. Add the sour cream, stir till heated and serve.

Chicken Tender In an Air Fryer

  • Chicken Tenders: Boneless and Skinless for less work.
  • White Flour: White flour will adhere best to the chicken
  • Salt and Pepper: Add to taste
  • Olive oil or Butter: Either one will produce a nice crisp and wonderful flavor
  • Garlic: Use fresh garlic for the best zing.
  • Basil: Dried basil will add flavor without burning the fresh basil
  • Paprika: Creates flavor and a bit of color
  • Panko: Panko creates a great crunch, but you can use bread crumbs too.
  • Parmesan Cheese: Finely fresh for the best seasoning

How Long to Cook Chicken Tenders in an Air Fryer

  1. Trim: If there is any excess fat on the tenders, trim it.
  2. Bowls: Set out 3 bowls. In the first one fill with the flour and salt and pepper. Second bowl fill with either the olive oil or butter and garlic. In the third bowl place the basil, paprika, panko and parmesan cheese. Stir all of the bowls to mix.

Dipping, dredging and coating of Air Fryer chicken tenders.

Tips and Tricks for the Best Chicken Tenders

  • Panko: You really want to use panko breadcrumbs instead of regular breadcrumbs. They are lighter and airier and because of that will absorb less oil and end up crispier. Breadcrumbs will work but they’ll be heavier.
  • Shake: A fun way to involve your kids in the baking is to put the panko and seasoning in a large ziploc bag. Place the chicken tenders in and let the kids shake it up.
  • Spices: You can definitely mix this up and add in different spices to your panko mixture. Italian, Mexican, Cajun, or whatever you want to mix up the spices.
  • Dry: Pat the Chicken dry before you dredge it. It’ll help all the goodness stick together.
  • Press: To help your coating stick press the crumbs on to the chicken strips.
  • Crowding: You don’t want to overcrowd the air fryer. They shouldn’t touch to allow for maximum air flow and they’ll cook nice and even.
  • Do not overcook the tenders. Otherwise, they become dry.
  • Over Cooking:  This is a no no. Use a meat thermometer and test them before you think they are done to make sure you don’t over cook them. You are looking for a temp of 165 degrees.
